  • 1 cup full-fat coconut milk
  • 1/4 cup maple syrup or honey (for non-vegan option)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1 tablespoon lime juice

If you’re feeling adventurous, you can substitute the mangoes with peaches or pineapples, and the results will be just as delightful. The lime juice adds a tangy twist that enhances the tropical flavors, while a pinch of salt balances the sweetness perfectly.

Instructions

  1. Begin by blending the chopped mangoes in a blender until smooth. This should take about a minute or so.
  2. Add the coconut milk, maple syrup (or honey), vanilla extract, lime juice, and a pinch of salt to the blender. Blend again until all ingredients are well combined and the mixture is smooth and creamy.
  3. Pour the mixture into popsicle molds, leaving a little space at the top to allow for expansion as they freeze.
  4. Insert the popsicle sticks into the molds. If your molds don’t have a built-in slot for sticks, you can cover the molds with aluminum foil and poke the sticks through for support.
  5. Freeze the popsicles for at least 4 hours, or until they are completely set.
  6. To remove the popsicles from the molds, run the bottom of the molds under warm water for a few seconds to loosen them.
