  • 1/4 cup chicken broth or water (for steaming green beans)
  • Fresh parsley, chopped (for garnish, optional)

For substitutions, I often use turkey bacon or pancetta if I want a slightly different flavor. If you’re vegetarian, you can swap out the bacon for smoked paprika or liquid smoke to get that smoky taste without the meat. Instructions

  1. Start by frying the bacon in a large skillet over medium heat until crispy, about 8-10 minutes. Use a slotted spoon to remove the bacon and set it aside on paper towels to drain. Leave the bacon drippings in the skillet for added flavor.
  2. If the bacon doesn’t render enough fat, add a tablespoon of olive oil or butter to the skillet. Next, toss in the diced potatoes and cook over medium heat, stirring occasionally, until they’re golden brown and tender, about 15-20 minutes. Season with a pinch of salt, pepper, and garlic powder. I like to cover the skillet for part of this time to help the potatoes cook through faster.
  3. While the potatoes are cooking, trim the green beans and set them aside. If you prefer softer green beans, blanch them in boiling water for 2-3 minutes, then immediately transfer to ice water to stop the cooking. This step is optional but helps keep their bright color and crisp-tender texture.
  4. Once the potatoes are nearly done, add the chopped onion (if using) to the skillet and sauté for 2-3 minutes until translucent. Sprinkle the ranch seasoning mix over the potatoes and onion, stirring to coat everything evenly.
  5. Pour in the chicken broth or water, then add the green beans to the skillet. Cover and let everything steam together for about 5-7 minutes, until the green beans are tender but still vibrant. Taste and adjust seasoning with more salt, pepper, or ranch seasoning if needed.
  6. Crumble the cooked bacon over the top, give everything a gentle stir, and cook uncovered for another 2 minutes to let flavors meld. Finish with a sprinkle of chopped parsley for a fresh touch.
