  • 1/4 cup chopped pecans or walnuts (for topping, optional)
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon vanilla extract
  • Fresh mint or parsley for garnish (optional)

If you don’t have fresh cranberries, frozen will work perfectly—just make sure to thaw and drain any excess liquid. I often swap out the nuts for a sprinkle of granola if I want a little crunch without nuts. This recipe is flexible and forgiving—just like my grandma’s kitchen!

Instructions

  1. Preheat your oven to 400°F. Wash the sweet potatoes thoroughly and prick each with a fork a few times. Place them on a baking sheet lined with parchment paper and bake for about 45-50 minutes, or until they’re tender when pierced with a fork. I usually test them after 45 minutes; if they’re soft and squishy, they’re ready.
  2. Remove the sweet potatoes from the oven and let them cool slightly. Once cool enough to handle, slice each in half lengthwise. Carefully scoop out the flesh into a large mixing bowl, leaving a little border around the edges so they hold their shape.
  3. In the bowl with the sweet potato flesh, add the melted butter, vanilla extract, honey (or maple syrup), cinnamon, nutmeg, and salt. Mash everything together with a fork or potato masher until smooth and creamy. I find that the warmth of the potatoes makes mashing easier and gives a nice silky texture.
  4. In a small saucepan over medium heat, combine the cranberries, diced apples, and a tablespoon of water. Cook for about 5-7 minutes, stirring occasionally, until the cranberries burst and the apples soften. Stir in an extra drizzle of honey if you like it sweeter. Let this mixture cool slightly.
  5. Gently fold the cranberry-apple mixture into the mashed sweet potatoes. Taste and adjust sweetness if needed—sometimes I add a little more honey or a splash of lemon juice for brightness.
  6. Spoon the filling back into the sweet potato skins, dividing evenly. Smooth the tops with the back of a spoon. If you’re using nuts, sprinkle them over the top now for added crunch.
  7. Place the filled sweet potato halves back on the baking sheet. Bake at 375°F for an additional 15-20 minutes, until the tops are slightly caramelized and the filling is heated through. This second bake helps meld all the flavors and gives the dish a lovely, baked finish.
  8. Remove from the oven and let cool for a few minutes. Garnish with fresh mint or parsley if you like, and serve warm.
