Learn how to make delicious Cranberry Maple Roast Chicken. Easy recipe with step-by-step instructions.

Ingredients

Scale

  • 1 whole chicken (about 4-5 pounds), or 4 bone-in, skin-on chicken thighs if you prefer dark meat
  • 1 cup fresh cranberries (or frozen cranberries, thawed)
  • 1/2 cup pure maple syrup
  • 3 tablespoons olive oil or melted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme (or rosemary, if preferred)
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 1 tablespoon balsamic vinegar (optional, for added depth)
  • 1 small onion, sliced (for roasting alongside)

Feel free to substitute fresh cranberries with frozen ones if that’s what you have on hand. I often use bone-in chicken thighs for their juiciness and ease of cooking, but a whole chicken works beautifully for a family feast. I like to keep the ingredients simple—just like my grandma did—so the flavors truly shine through. The garlic, thyme, and a touch of balsamic add depth, but feel free to adjust the herbs to your taste.

Instructions

  1. Preheat your oven to 375°F (190°C). If using a whole chicken, pat it dry with paper towels, then season generously with salt, pepper, and thyme inside and out. If using chicken thighs, season similarly and set aside.
  2. In a small bowl, whisk together the maple syrup, olive oil (or melted butter), minced garlic, and balsamic vinegar if using. This will be your glaze and marinade.
  3. Place the chicken in a roasting pan or baking dish. If using a whole chicken, tuck the sliced onion and a handful of cranberries inside the cavity for extra flavor. Spread the cranberry mixture around the chicken in the pan.
  4. Brush the chicken generously with the maple glaze, making sure to coat all sides. Scatter the remaining cranberries and onion slices around the chicken for roasting.
  5. Roast the chicken in the preheated oven, basting every 20-30 minutes with the remaining glaze to build up that beautiful caramelized coating. Whole chicken will take about 1 hour to cook, while thighs may need around 40-45 minutes. Use a meat thermometer to ensure the internal temperature reaches 165°F.
  6. Once cooked, let the chicken rest for about 10 minutes before carving. This helps keep the juices inside and makes for a tender, flavorful bite.
  7. Serve your Cranberry Maple Roast Chicken warm, spooning some of the roasted cranberries and juices over the top for added flavor and presentation.
