Instructions

  1. Preheat your oven to 375°F (190°C). Bring a large pot of salted water to a boil, then cook the pasta shells until just al dente, following package instructions. Drain and set aside to cool slightly so they’re easier to handle.
  2. While the pasta cooks, prepare the filling. In a large skillet, heat the olive oil over medium heat. Add the diced chicken, season with a pinch of salt and half of the Cajun seasoning, and cook until browned and cooked through, about 7-8 minutes. Remove from skillet and set aside.
  3. Sauté the vegetables. In the same skillet, add the chopped onion and bell pepper. Cook until softened, about 5 minutes. Add the garlic and cook for another minute until fragrant. Stir in the remaining Cajun seasoning for extra flavor.
