  • 1 pound Italian sausage, removed from casings
  • 1 medium onion, diced

  • 2 cans (15 ounces each) of white beans, drained and rinsed
  • 1 cup heavy cream
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sausage and cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
  2. Add the diced onion to the pot and sauté until translucent, approximately 3-4 minutes. Then, stir in the minced garlic and cook for another minute until fragrant.
  3. Add the white beans to the pot, along with the chicken broth, dried thyme, and smoked paprika. Stir the mixture well and bring it to a gentle simmer.
  4. Reduce the heat to low and stir in the heavy cream. Let the soup simmer for another 10-15 minutes, allowing all the flavors to meld together.
  5. Season with salt and pepper to taste. If you prefer a smoother soup, use a hand blender to blend part of the soup until creamy, leaving some beans whole for texture.
  6. Once done, ladle the soup into bowls, garnish with fresh parsley, and serve hot.
