  1. Rinse the shrimp under cold water and pat dry with paper towels.
  2. In a bowl, mix together the flour, cornstarch, baking powder, garlic powder, paprika, salt, and pepper.
  3. In another bowl, beat the eggs until they’re smooth.
  4. Combine the panko bread crumbs and Parmesan cheese in a third bowl.
  5. Heat about 2 inches of vegetable oil in a large skillet over medium-high heat. The oil should reach 350°F.
  6. Coat each shrimp in the flour mixture, then dip into the beaten eggs, and finally coat with the panko mixture. Press the crumbs gently to ensure they adhere well.
  7. Fry the shrimp in batches, about 2-3 minutes per side, or until they’re golden brown and crispy. Avoid overcrowding the pan.
  8. Remove the shrimp and drain on a paper towel-lined plate to absorb excess oil.
