Instructions

Follow these steps to make your own crispy stuffed scallion pancakes, just like those from my grandma’s kitchen:

  1. In a large bowl, mix the flour and salt. Gradually add the boiling water, stirring with a wooden spoon until a shaggy dough forms.
  2. Transfer the dough to a floured surface and knead for about 5 minutes, or until smooth and elastic. Cover with a damp cloth and let it rest for 30 minutes.
