  • 2 boneless, skinless chicken breasts (or thighs for extra flavor). You can substitute cooked shredded chicken, if you have leftovers.
  • 4 cups chicken broth (preferably homemade or low-sodium for better control of salt)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 carrots, sliced thin
  • 2 celery stalks, sliced
  • 1 (14-ounce) can diced tomatoes, with their juice
  • 1 teaspoon dried thyme (or Italian seasoning if you prefer a more robust herb flavor)
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt (adjust to taste)
  • 1 package (9-10 ounces) cheese tortellini (fresh or frozen)
  • 1 cup fresh spinach, chopped (optional, but adds a lovely touch of greens)
  • 1 cup shredded mozzarella or Parmesan cheese (for added richness)

For substitutions, you can use cooked rotisserie chicken instead of raw chicken breasts, which cuts down prep time. If you prefer a bit more spice, throw in a pinch of red pepper flakes. I’ve also made this with kale instead of spinach, and it turned out just as delicious. The key is to use fresh ingredients whenever possible — it’s those little touches that make all the difference.

Instructions

  1. Place the raw chicken breasts into the bottom of your slow cooker. If using cooked shredded chicken, you can add it later in the process.
  2. Add the diced onion, sliced carrots, celery, and minced garlic on top of the chicken.
  3. Pour in the chicken broth, then add the diced tomatoes with their juice. Sprinkle in the thyme, salt, and black pepper.
  4. Cover and cook on low for about 6 hours, or on high for about 3 hours. I usually prefer the low setting for more tender chicken and flavors melding beautifully.
  5. Once the cooking time is up, remove the chicken breasts and shred them using two forks. Return the shredded chicken to the soup.
  6. Add the cheese tortellini directly into the slow cooker, stirring to combine. Cover and cook on high for an additional 20-25 minutes, or until the tortellini is tender.
  7. If using fresh spinach, stir it in during the last 5 minutes of cooking. It wilts quickly and adds a vibrant pop of color and nutrients.
  8. Finally, stir in the shredded mozzarella or Parmesan cheese until melted and creamy. Taste and adjust the seasoning with more salt or pepper if needed.

One tip I’ve learned from years of cooking is to keep an eye on the tortellini towards the end. Overcooking can cause it to turn mushy, so I always set a timer and check for doneness.
