  • 1/4 cup grated Parmesan cheese (plus more for serving)
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped (for garnish; optional but adds a lovely color and freshness)

For substitutions, you can swap the steak for chicken breast or shrimp if you prefer seafood or poultry. The cheese tortellini can be replaced with ravioli or even gnocchi for a different but equally delicious twist. And if you’re dairy-free, a good quality olive oil and nutritional yeast can help mimic the richness.

Instructions

  1. Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions until al dente, usually about 2-3 minutes for fresh, 4-5 for frozen. Drain and set aside, reserving a cup of pasta water for later if needed.
  2. While the pasta cooks, season the sliced steak generously with salt, pepper, and thyme or Italian seasoning. I suggest doing this step just before cooking to keep the meat tender and flavorful.
  3. In a large skillet over medium-high heat, melt 2 tablespoons of butter. Once hot, add the steak slices in a single layer, cooking for about 2-3 minutes per side until they develop a beautiful sear and reach your desired doneness. I like mine medium-rare, but cook to your preference. Remove the steak and set aside.
  4. Lower the heat to medium and add the remaining 2 tablespoons of butter to the same skillet. Add the minced garlic and red pepper flakes if using.
