Learn how to make delicious Italian Zucchini Garlic Bites. Easy recipe with step-by-step instructions.

Ingredients

Scale

As someone who grew up helping in a kitchen where fresh ingredients were treasured, I always prioritize quality and simplicity. Here’s what you’ll need to create these delightful bites—feel free to make substitutions if needed, but I recommend sticking close to the original for that authentic flavor.

  • 3 medium zucchinis (about 1.5 pounds), sliced into 1/4-inch thick rounds
  • 3 cloves garlic, minced (feel free to add more if you love garlic!)
  • 2 tablespoons olive oil (extra virgin for the best flavor)
  • 1/2 cup grated Parmesan cheese (can substitute with Pecorino Romano or vegan cheese)
  • 1/4 cup fresh parsley, chopped (or basil if you prefer)
  • 1 teaspoon Italian seasoning (or a mix of dried oregano and thyme)
  • Salt and freshly ground black pepper to taste
  • Panko breadcrumbs (about 1/2 cup, optional for a crunchy topping)

When I first made these, I experimented with adding a splash of lemon juice or a sprinkle of red pepper flakes. Both options add a little extra flair—try them out and see what suits your taste!

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.
  2. Wash the zucchinis thoroughly. Slice them into about 1/4-inch thick rounds—this thickness ensures they cook evenly and hold their shape. I usually slice them while my grandma watched from her cozy chair, still telling stories from her youth. It’s one of my favorite memories in her kitchen.
  3. In a small bowl, combine the minced garlic, olive oil, Italian seasoning, salt, and pepper. Whisk together until well blended. I like to let the garlic sit in the oil for a few minutes to release more flavor—just like my grandma taught me.
  4. Brush both sides of the zucchini slices with the garlic oil mixture. You can also toss them gently in a bowl if you prefer less mess.
  5. Arrange the coated zucchini slices on the prepared baking sheet in a single layer. Make sure they aren’t overlapping to get that nice, even roast.
  6. Sprinkle the grated Parmesan cheese evenly over each slice. For extra crunch, add panko breadcrumbs on top—my grandma always loved a bit of texture in her bites.
  7. Bake for 15-20 minutes, or until the zucchini is tender and golden around the edges. Keep an eye on them after the 15-minute mark—sometimes my oven runs hot, and I’ve had to pull them out a bit earlier.
  8. For an added finishing touch, sprinkle chopped parsley over the hot bites as soon as they come out of the oven. It brightens the flavor and makes everything look more tempting.
  9. Serve warm, or let them cool to room temperature. These are just as good at the picnic table as they are on your dinner plate.
