Instructions

  1. Preheat your oven to 375°F (190°C). Line a standard muffin tin with paper liners or lightly grease it to prevent sticking. I always like to use a little butter or non-stick spray for extra ease.
  2. In a microwave-safe bowl, melt the chocolate and butter together in 30-second intervals, stirring after each until smooth. I find that melting it slowly prevents scorching and keeps the chocolate glossy and smooth.
  3. In a separate large bowl, whisk together the sugar and eggs until well combined and slightly frothy. Add the vanilla extract and stir again.
  4. Pour the melted chocolate mixture into the egg mixture, whisking steadily to incorporate everything evenly. This is where I often sneak in a little taste—I swear, it’s the best part!
  5. Gently fold in the flour and salt until just combined. Be careful not to overmix; a few streaks of flour are fine. Overmixing can make the cupcakes dense, and I like mine delicate and tender.
  6. Carefully fold in the fresh raspberries, trying not to crush them. They add that lovely tartness and color, making each cupcake look as good as it tastes.
  7. Divide the batter evenly among the prepared muffin cups, filling each about three-quarters full. To get the signature molten center, I recommend filling most of the way up—just leave a tiny bit of space.
  8. Bake for 12-14 minutes, or until the edges are set but the centers still look slightly soft and glossy. My trick is to start checking at the 12-minute mark—if the tops bounce back gently when pressed, they’re ready.
