Learn how to make delicious Pistachio Éclairs with Chocolate Glaze. Easy recipe with step-by-step instructions.

Ingredients

Scale

  • 1 cup (240 ml) water
  • 1/2 cup (115 g) unsalted butter
  • 1/4 teaspoon salt
  • 1 cup (125 g) all-purpose flour
  • 4 large eggs
  • 1 cup (120 g) shelled pistachios, plus extra for garnish
  • 1/2 cup (100 g) granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup (240 ml) heavy cream
  • 1/4 cup (30 g) powdered sugar
  • 2 ounces (60 g) dark or semi-sweet chocolate, chopped
  • 2 tablespoons (30 g) unsalted butter
  • Optional: pinch of salt or a splash of almond extract for the filling

For substitutions, if you don’t have pistachios, toasted almonds or hazelnuts can lend a similar nutty flavor. The chocolate glaze can be made with milk chocolate if you prefer a sweeter finish. I always keep a jar of homemade pistachio paste in my fridge—it’s a game-changer for recipes like this, adding that concentrated nutty flavor that makes everything special.

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
  2. In a medium saucepan, combine water, butter, and salt. Bring to a boil over medium heat, stirring occasionally. Once boiling, remove from heat.
  3. Add the flour all at once, stirring vigorously with a wooden spoon until the mixture forms a smooth, cohesive dough that pulls away from the sides of the pan. Return to heat briefly for about a minute to cook out the raw flour taste. My grandma always told me to look for the dough to form a ball and leave a film on the bottom of the pan—that’s how I knew it was ready.
  4. Transfer the dough to a mixing bowl and let it cool slightly for 2-3 minutes. Then, add eggs one at a time, mixing well after each addition. The dough should become glossy and smooth, similar to thick pudding.
  5. Spoon the dough into a piping bag fitted with a large round tip. Pipe 3-4 inch long strips onto your prepared baking sheet, leaving space between each because they will puff up.
  6. Bake for 25-30 minutes, or until the éclairs are golden brown and puffed. I sometimes open the oven slightly during the last 5 minutes to let moisture escape, which helps keep them crisp.
  7. Remove from oven and let cool completely on a wire rack. Once cooled, cut a small slit at the bottom of each éclair to insert the pistachio filling later.
  8. While the éclairs cool, prepare the pistachio filling. In a food processor, blend the pistachios, sugar, vanilla, and a pinch of salt until finely ground. In a mixing bowl, whip the heavy cream with powdered sugar until stiff peaks form. Gently fold in the pistachio mixture until well combined.
  9. Use a piping bag or a spoon to fill the cooled éclairs with the pistachio cream through the slit. Be gentle but firm—your grandma’s secret was always patience and love in every step.
  10. For the chocolate glaze, melt the chopped chocolate, butter, and a pinch of salt in a heatproof bowl set over simmering water. Stir until smooth and glossy. Let it cool slightly so it’s spreadable but still shiny.
  11. Dip the tops of the filled éclairs into the chocolate glaze, letting excess drip off. Place on a wire rack to set. Garnish with chopped pistachios if desired for an extra touch of elegance.
