  • 4 fresh salmon fillets, skin on or off depending on preference
  • 4 large potatoes (Russet or Yukon Gold work well), thinly sliced
  • 2 tablespoons olive oil
  • 1 cup heavy cream or full-fat milk (for a lighter version)
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 teaspoon dried thyme or dill (fresh herbs can be substituted)
  • Salt and freshly ground black pepper, to taste
  • 1 cup grated Parmesan or Gruyère cheese (optional but adds a lovely crust)
  • Fresh parsley, chopped (for garnish)

I’ve experimented with substitutions in my own kitchen — for example, using coconut milk for a dairy-free version or swapping out herbs based on what I have on hand. Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with a bit of olive oil or butter.
  2. Thinly slice the potatoes into rounds about 1/8 inch thick. I find using a mandoline makes this step much easier and ensures even cooking. Rinse the slices in cold water to remove excess starch, then pat dry.
  3. In a small saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes. Stir in the thyme or dill, then remove from heat.
  4. Arrange a layer of potato slices at the bottom of your prepared dish. Season lightly with salt and pepper, then spoon some of the sautéed onion and garlic mixture over the potatoes.
  5. Place the salmon fillets on top of the potato layer. Season the fillets with salt, pepper, and a sprinkle of herbs. If you’re using skin-on salmon, place skin-side down for easier handling.
  6. Layer another set of potato slices over the salmon, pressing gently to pack the layers together. Repeat the seasoning process as needed.
  7. Pour the heavy cream or milk evenly over the assembled layers. This will create a luscious sauce as it bakes, infusing all the flavors together.
  8. Sprinkle the grated cheese over the top, if using. It will melt and form a beautifully golden crust that I always look forward to — a reminder of those rustic family dinners from my childhood.
  9. Cover the dish with foil and bake in the preheated oven for about 35-40 minutes. Remove the foil and bake for an additional 10 minutes to allow the cheese to turn golden and bubbly.
  10. Once baked, let it rest for 5 minutes before garnishing with chopped parsley. Serve warm, and enjoy the comforting aroma that fills your kitchen — just like at Grandma’s house.
