Instructions

  1. Start by searing the beef. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the beef chuck roast and sear it on all sides until browned. This step is crucial as it locks in flavor.
  2. Transfer the seared beef to your slow cooker. Add the carrots, potatoes, onion, and garlic around the roast.
  3. In a small bowl, mix the beef broth, Worcestershire sauce, thyme, salt, and pepper. Pour this mixture over the meat and vegetables in the slow cooker.
