Learn how to make delicious Snickers Caramel Cheesecake Bites. Easy recipe with step-by-step instructions.

Ingredients

Scale

  • 1 1/2 cups graham cracker crumbs (or digestive biscuits, crushed finely)
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened (full-fat for best flavor)
  • 1/2 cup sour cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 12 miniature Snickers bars, chopped into small pieces
  • 1/2 cup caramel sauce (preferably thick and gooey)
  • Chopped roasted peanuts (optional, for topping)
  • Chocolate melting wafers or semi-sweet chocolate (for drizzling, optional)

For substitutions, if you’re gluten-free, you can swap graham crackers with gluten-free cookies or crushed gluten-free pretzels for a salty twist. If you prefer a nut-free version, simply omit the peanuts or replace them with mini chocolate chips. I’ve found that the richness of caramel and the crunch of peanuts are what make these bites truly irresistible, but feel free to get creative with your toppings!

Instructions

  1. Preheat your oven to 350°F (175°C). Line a mini muffin tin with paper liners or silicone molds for easy removal.
  2. In a small bowl, combine graham cracker crumbs and granulated sugar. Pour in the melted butter and mix until the crumbs are evenly coated and resemble wet sand.
  3. Divide the crumb mixture evenly among the muffin cups, pressing down firmly to form a compact crust at the bottom of each. Use the back of a spoon or a small glass to help pack the crust tightly.
  4. Bake the crusts for about 8 minutes until they turn slightly golden. Remove from oven and let cool slightly.
  5. While the crusts are cooling, prepare the cheesecake filling. In a large mixing bowl, beat the softened cream cheese until smooth and creamy—this was always my grandma’s secret to getting that silky texture. Add sour cream, powdered sugar, and vanilla, and mix until well combined.
  6. Beat in the eggs, one at a time, ensuring each is fully incorporated before adding the next. The batter should be smooth and thick.
  7. Gently fold in the chopped Snickers bars, making sure they’re evenly distributed throughout the batter.
  8. Spoon the cheesecake mixture over the cooled crusts, filling each muffin cup about three-quarters full. Tap the tin gently on the counter to remove any air bubbles and settle the batter.
  9. Bake for 15-18 minutes, or until the edges are set but the centers still have a slight jiggle. Remember, my grandma always said a little jiggle means the cheesecake is just right—don’t overbake!
  10. Remove from oven and allow to cool completely in the tin. Once cooled, drizzle each bite with caramel sauce and sprinkle with chopped peanuts if desired. For an extra touch, melt some chocolate wafers and drizzle over the top for a glossy finish.
  11. Chill the bites in the refrigerator for at least 2 hours or overnight. This helps set everything beautifully and melds the flavors together, making each bite irresistibly creamy and rich.
