  • 1 1/2 cups granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup buttermilk
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup fresh lemon juice
  • Zest of 2 lemons
  • 1 1/2 cups fresh strawberries, hulled and chopped
  • 1/4 cup strawberry jam (preferably homemade)

If you need to substitute, feel free to use almond milk with a tablespoon of vinegar as a buttermilk alternative. You can also swap the fresh strawberries for frozen ones, just be sure to thaw and drain them well.

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. Line them with parchment paper for easy removal.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt. Make sure everything is well combined.
  3. Add the softened butter and mix on low speed until you achieve a sandy consistency.
  4. In a separate bowl, whisk together the buttermilk, eggs, vanilla extract, lemon juice, and lemon zest.
  5. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Be careful not to overmix.
  6. Gently fold in the chopped strawberries and the strawberry jam until evenly distributed.
  7. Divide the batter equally between the prepared cake pans.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  10. Once cooled, you can frost the cake with your favorite lemon or cream cheese frosting. I often use a simple lemon glaze for a lighter finish.
