Learn how to make delicious Stuffed Bell Peppers Will Love. Easy recipe with step-by-step instructions.

Ingredients

Scale

When I prepare these stuffed peppers, I always start with fresh, quality ingredients—just like my grandma taught me. I’ve included some substitution ideas too, so you can customize the recipe based on your preferences or pantry staples.

  • 4 large bell peppers (any color you prefer; red, yellow, or orange for sweetness, or green for a more savory bite)
  • 1 pound ground beef, turkey, or chicken (can also substitute cooked lentils or quinoa for a vegetarian option)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup cooked rice, quinoa, or couscous (for a grain-free version, try cauliflower rice)
  • 1 cup shredded cheese (cheddar, Monterey Jack, or mozzarella—feel free to mix and match)
  • 1 can (14.5 oz) diced tomatoes, drained (or fresh chopped tomatoes if in season)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano or Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley or basil for garnish (optional but adds a lovely freshness)

Instructions

  1. Preheat your oven to 375°F. Line a baking dish with parchment paper or lightly grease it to prevent sticking.
  2. Wash the bell peppers carefully, then slice off the tops and remove the seeds and membranes. I like to keep the tops—they make adorable lids if you want to serve them that way, but for stuffing, removing the membranes is best.
  3. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. I find that softening the onion brings out a sweeter flavor, reminiscent of my grandma’s slow-cooked meals.
  4. Add the minced garlic and cook for another minute until fragrant. Be careful not to burn it—garlic can go from perfect to bitter quickly.
  5. Stir in the ground meat, breaking it apart with a wooden spoon. Cook until browned and cooked through, about 6-8 minutes. Season with salt, pepper, and oregano or Italian seasoning as you go. I always taste the mixture here—it’s just like tasting a little piece of home.
  6. Once the meat is cooked, add the cooked rice and drained diced tomatoes. Mix well and cook for another 2-3 minutes, allowing flavors to meld. If you like a bit of heat, sprinkle in some red pepper flakes here.
  7. Remove the skillet from heat and stir in half of the shredded cheese. This will help keep the filling moist and cheesy—because who doesn’t love cheese?
  8. Stuff each bell pepper with the filling, pressing gently to pack it in. Place the stuffed peppers upright in your prepared baking dish.
  9. Top each pepper with the remaining cheese for a bubbling, cheesy top. Cover the dish loosely with foil to keep everything moist.
  10. Bake in the preheated oven for 30-35 minutes. Remove the foil and bake for an additional 5-10 minutes until the cheese is golden and bubbly. I love to peek at them through the oven window—those peppers look so inviting, bursting with color and aroma.
  11. Garnish with chopped parsley or basil before serving. Serve hot, perhaps with a side of crisp greens or crusty bread. I often serve these with a simple side salad—something fresh and light to balance the richness of the filling.
