Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with parchment paper or lightly grease it.
  2. Cut each acorn squash in half from stem to tip and carefully scoop out the seeds and stringy bits. You can save the seeds for roasting if you like—they make a crunchy snack!
  3. Brush the cut sides of the squash with a little olive oil and season generously with salt and pepper. Place cut side down on the prepared baking sheet.
  4. Roast in the oven for about 40-45 minutes, or until the flesh is tender when pierced with a fork. I like to check around the 35-minute mark and give the squash a gentle press to see if it’s softening evenly.
  5. While the squash roasts, heat a large skillet over medium heat.
