Instructions

  1. Preheat your oven to 400°F. While it heats, poke each sweet potato a few times with a fork to allow steam to escape during baking. Place them on a baking sheet lined with parchment paper. Roast for about 45-50 minutes, or until tender when pierced with a fork.
  2. While the sweet potatoes are roasting, heat a tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Then, stir in the minced garlic and cook for another minute until fragrant.
  3. Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until browned and cooked through, about 7-8 minutes. Drain any excess fat if necessary.
  4. Sprinkle the chili powder, cumin, smoked paprika, oregano, cayenne (if using), salt, and pepper over the turkey. Mix well and cook for another minute to let the spices bloom.
  5. Stir in the tomato sauce or diced tomatoes, and simmer the mixture for 5 minutes. Taste and adjust seasoning as needed. I like to add a bit more chili powder or cumin if I want extra flavor.
  6. Once the sweet potatoes are cooked and cool enough to handle, carefully slice them in half lengthwise. Scoop out most of the flesh into a bowl, leaving a small border to help maintain their shape.
  7. Mix the scooped-out sweet potato flesh into the turkey mixture if you like a creamier filling, or leave it aside for a chunkier texture. Spoon the turkey mixture back into the sweet potato shells, dividing evenly.
  8. Sprinkle shredded cheese over each stuffed sweet potato. Place the stuffed halves back on the baking sheet and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven, garnish with chopped cilantro, and serve hot with your favorite toppings like sour cream, sliced jalapeños, or a squeeze of lime.
